Directions
- 1
Brown
Cook sausage and bell pepper in a large pot over medium-high heat for 2–3 minutes.
- 2
Add tomato
Stir in the tomato paste and cook briefly so it is evenly distributed.
- 3
Simmer the rice
Add broth, rice, and seasonings. Cover and simmer for 20–24 minutes, stirring occasionally, until the rice is tender.
- 4
Adjust if needed
If the liquid is gone before the rice is soft, add water 1/4 cup at a time and continue cooking.
Make it work with what you have
Hot dogs, another cooked sausage, or beans can replace smoked sausage. Use water plus bouillon instead of broth.
Simple and filling
A strongly flavored sausage seasons the rice, so a short ingredient list still produces a hearty dinner.
Storage
Refrigerate promptly and eat within 3 days. Reheat until steaming; add a spoonful of water if the rice seems dry.
Stretch this meal further
These are Helping Plate’s practical additions for shopping carefully and cooking with food-distribution staples.
- Slice sausage thinly so a little flavor reaches every bite.
- Frozen pepper-and-onion blend avoids waste when fresh produce will not be used quickly.
- Compare sausage by unit price; store brands and larger links are often easier to portion.
