Step by step

Directions

About 18 minutes
  1. 1

    Drain and flake

Drain the salmon thoroughly. Add it to a medium bowl and break it into small flakes with a fork. Remove skin or bones if that is your preference.

  2. 2

    Mix the base

Add the egg, scallions, garlic powder, onion powder, salt, and optional ginger. Mix until the egg is evenly distributed.

  3. 3

    Add the binders

Stir in the flour and breadcrumbs. Let the mixture stand for 2 minutes so the crumbs can absorb moisture. If it still will not hold together, mix in one additional tablespoon of breadcrumbs.

  4. 4

    Shape four patties

Divide the mixture into four equal portions. Press each into a compact patty about 1/2 inch thick.

  5. 5

    Pan-fry

Heat 1 tablespoon oil in a skillet over medium heat. Cook the patties for about 3 minutes per side, adding the second tablespoon of oil only if the pan becomes dry. They should be browned and reach 160°F in the center.

  6. 6

    Or air-fry

Lightly oil the basket and both sides of the patties. Air-fry at 390°F for 8–10 minutes, flipping halfway through, until browned and 160°F in the center.

Pantry swap

Make it work with what you have

Crushed crackers can replace the breadcrumbs. Finely chopped onion can replace scallions. If your salmon can is only 5–6 ounces, halve the flour and breadcrumbs and plan on 1–2 servings.

Why it works

Simple and filling

Canned salmon is already cooked, shelf-stable, and easy to portion. Flour and breadcrumbs absorb moisture while the egg holds four small patties together.

Keep leftovers

Storage

Refrigerate cooked patties in a covered container within 2 hours and use within 3 days. Reheat leftovers to 165°F.

Helping Plate field notes

Stretch this meal further

These are Helping Plate’s practical additions for shopping carefully and cooking with food-distribution staples.

  • Drain the salmon very well; excess liquid is the main reason patties fall apart.
  • If the mixture feels soft, let it stand for 2 minutes, then add breadcrumbs one tablespoon at a time only if needed.
  • Serve each patty with rice, cabbage, frozen vegetables, or a simple salad to turn four small patties into four light meals.

Historical creator prices are context, not a current-price guarantee. Helping Plate estimates that the basic recipe can often be made for less than $10 when pantry seasonings and cooking oil are already available.
